Tokyo Eats: Japanese Souffle Pancakes at Flipper’s Cafe Shibuya

Flipper’s Cafe in Shibuya is a popular destination for the Japanese soufflé pancakes.

Melt-in-your-mouth Japanese souffle pancakes are a highly sought-after item for many foodies traveling to Japan. While I’d tried them elsewhere, my friend visited and wanted to try the Japanese souffle pancakes at Flipper’s Cafe in Shibuya, Tokyo. This spot is famous on TikTok and Instagram, and as such, it is very popular with tourists. Of course, I wanted to see what the hype was about. I was in! Here’s my review and experience.

These light, airy pancakes are called Kiseki pancakes, and this name was coined and made popular by Flipper’s. The pancakes melt in your mouth like foam or warm clouds, and as such leave you feeling satisfied but not heavy!

What Is Special About Flipper’s?

Yes, you can get the fluffy Japanese souffle pancakes in many cafes across Tokyo. The eggs are the main ingredient in souffle pancakes. However, Flippers’ uses only fresh eggs from Taketori farm, a partner farm in Miyagi prefecture. In addition, Flipper’s Cafe has gained popularity online for the pancakes. The very first location was opened in Shimokitazawa in 2016.

How To Avoid Long Wait Lines at Flippers in Shibuya

There are only two ways to avoid long wait times for your Japanese souffle pancakes at Flippers in Shibuya. The first is to arrive before the restaurant opens; that way, you are one of the first to be let in. The other option is to make a reservation (this requires a payment, see more details below).

What To Expect For Wait Times

Reports online indicate wait times of up to 90 minutes, while some indicate wait times of about 30 minutes. It’s Japan after all, so standing in line is part of the experience. Flipper’s Shibuya is quite popular, so the wait times are longer than average.

In addition, no matter where you go for these pancakes, plan for a wait for your food, as it takes 20 minutes to make the pancakes.

How To Make A Reservation for Flippers Shibuya

To skip the lines entirely, you can make an online reservation for Flippers Shibuya at Table Check. However, this comes at a cost of ¥1000 per person (about $6.81 USD as of August 2025), and can only be booked 14 days in advance. Arrival more than 15 minutes past the reservation time would result in an automatic cancellation.

My friend made a reservation online, and it came in quite handy because there was a long queue around the building when we arrived for our reservation, and there was still a queue when we left. Our reservation was right at 11:00 am when they opened. To be honest, I personally found the cost of the reservation to be steep, and I did not like that, especially given that it does not go towards the cost of the meal.

Even with a reservation, you may still have a bit of a wait for seating. In our case, we waited for no longer than 5 minutes.

Menu Selection

While Flippers is known for the souffle “Kiseki’ pancakes, I was impressed with how extensive the menu was.

Popular Kiseki pancake flavours are Strawberry, Milk Tea, Fresh Fruit, Chocolate Banana, Matcha, and Royal Sweet Milk Tea. There’s even a chicken and fried egg plate as well. Check out the full English Menu for the Shibuya location.

The space is decorated with floral elements, it is bright and airy, and it is definitely ‘instagrammable’ with touches of yellow throughout.

Overall Experience At Flipper’s Cafe Shibuya, Tokyo

We were seated within about five minutes of our arrival, and the waiter took our drink orders right away. I was so glad we had the reservation, as it was scorching outside. While we waited for our drinks, we were served peanuts to nibble on, a pleasant surprise.

For our drinks, I ordered the ‘6 kinds of fruits’ tea as well as a cold drink. My friend ordered a coffee and then another cold signature drink (the pink guava juice).

Te and Coffee Blends at Flipper's Cafe Shibuya

For my main meal, I actually skipped the souffle pancakes as I was impressed to see they had other options. I have had those pancakes at other cafes in Tokyo a few times, and I was in the mood for something else. My friend had the Souffle pancakes with fruit (strawberries, blueberries, and bananas) while I had the Aged bacon & eggs and classic pancake plate.

Flipper’s Cafe offers a menu selection of pancakes and English meals

We both enjoyed our meals. My friend enjoyed her souffle pancakes and commented on how fluffy and light it was! Japanese souffle pancakes taste a little ‘eggy’, which is right on as eggs are the main ingredient, but sometimes this is surprising to some visitors to Japan. The portion sizes were just perfect, and the ambiance was great!

To my knowledge, there are no set time limits for patrons, but we were in and out in about 75 minutes and we felt as though we took our time.

I absolutely recommend Flipper’s Cafe Shibuya for your taste of Japanese souffle pancakes in Tokyo and beyond. I can’t wait to share more about the hundreds of other restaurants I have tried (and will try) in Tokyo.
